Sparkling Plum Pies from Cousin D
We’re already starting with two pies instead of one. They not only make a great county fair cuisine worthy of your own kitchen--they’re also an excellent way to get rid of any leftover fruit, especially berries, cherries, the whole fruit platter.
Ingredients
1 package of 2 pie crusts
20 plums
40oz apple sauce
2 cups sugar
1 cup infused corn syrup
4 tbsp tapioca pearls
3 heaping tbsp flour
2 tsp lemon or lime juice
Directions
Preheat the oven to 325℉. Start with the plums. Cooked them down, strain out the pits and blend up the rest. Do so accordingly with any fruit you choose. Then mix everything else well together while pre-baking the pie shells for a good 20 minutes. Add filling and bake for 30-40 min, until the crust turns a perfect golden hue. Let cool, and then allow to firm up in the fridge.
Serve with ice cream, whipped cream, or any other boardwalk confections you can conjure. Enjoy experimenting with both fruit selection and THC. Choose your own adventure!
